Dinner: QUICK

Some of us love fish.
Some of us don't.
My friend told me about a way to cook salmon that was FAST and EASY.
I decided to try it.
Put your salmon in an oven-safe dish.
Drizzle with olive oil, salt and pepper.
Put into a cold oven and set to to 425(F).
Set the timer for 25 minutes.
That's it!

I figured if it worked for salmon, it might work for chicken breasts too.
(I marinated mine an hour before baking)
In went one dish of fish
and one dish of chicken.
I had just enough time to cook some rice pilaf and throw together a salad. At the end of 25 minutes I had dinner for six!  And guess what?... It worked beautifully for both.

I will have to try it with chicken now, I'm glad you think outside of the box and then share with us :-)

Looks yummy, and I LOVE salmon. My favorite restaurant in JP fixes a chipotle and maple-glazed salmon with creamy polenta and broccoli. My favorite meal and I get it 99% of the time. Very rarely do I change because it is so good. They never even ask if I want a menu because they know what I like.

I am a NOT fish lover but daddy is.
Someday I want to be able to cook some salmon for him and maybe even for me. I have YET to find salmon cooked good... or at least eatable.

Did any fishy flavor get onto the chicken? What did you marinate the chicken in? :-)
